Many Americans probably would look at the foods they eat and say no way that is just to disgusting to eat, but to them they see the foods they eat as the basis of their diet. The Spanish incorporated many fine spices and foods which only added to the deliciousness of the Mexican meal, like lamb, cheese, chicken, yeast in bread, coffee, cinnamon, geese, rice, olives, onion, garlic and many others. Many cooking techniques and preparation of foods were combined as well in to Mexican foods. During the Week of the Dead many different traditions take place as well such as in the oldest state of Mexico, Pueblo. N Pueblo is the oldest and most steadfast link to the great natives of the Aztecs. These people and some towns have not changed the ways they’ve been living since the days of their great ancestors. “El baile de los voladores” is a dance which takes place on a very tall pole overlooking the entire city. One family climbs the giant pole and suspends themselves from ropes and as they twist around the pole 13 times they descend to the ground. There are four twirlers marking the four seasons and four directions on the compass. This sacred dance honors the gods of agriculture. Also there is the “el baile de los Santiagos” which is a dance that celebrates a great hero who slays demons with his sword. When it comes to food this great state of Pueblo has it all. There is an ancient cactus that has several uses for it is deeply engrained in their culture. It is called the maguey cactus. This cactus can be used for needles, thread, clothes, food wraps, and the best of all its alcohol. They use the juices on the inside to ferment and alcohol which is used in ceremonies to calm the spirits and numb the body. The speaker of the movie also travels to the religious capital of Mexico, Cholula. Cholula is built on the ancient Aztec city with has the biggest temple ever constructed during that period.
