De Heem does this to make the fruit seem ripe to the viewer, almost as if one can touch it and take bite expecting it to be juicy. The vanishing point is located in the center of the painting, bringing into focus the loaf of bread, grapes, peaches and oysters. The tonal range of the painting adds a lot of lighting on the fruit presented, making it seem very bright and more appetizing. De Heem uses a lot of primary colours such as yellow and red for this effect.
