Food Journal Insights Before the assignment to write this paper, I thought that my eating habits were satisfactory when measured against The Healthy Eating Index: 1999-2000. Unfortunately and to my dismay, I’ve discovered that my diet needs to be updated to include more of the nutrients that my body requires and less of the harmful or non-essential victuals that I’ve been consuming to improve my overall health. I recorded my food choices on Sunday as day one. Normally, I would not have eaten eggs and toast on Sunday morning; however, my husband’s thoughtfulness led to me having breakfast in bed. I don’t usually care to eat much in the mornings, but I ate the meal because of his extra effort on my behalf. I don’t mind eating eggs because I do believe they render some value, but I normally choose to eat them later in the day as I’m a definite brunch eater. Eggs do seem to help me sustain a certain weight and thru this exercise, I’ve learned that eggs provide higher quantities of vitamin A, riboflavin, vitamin B-12, protein, and phosphorous. ... Along with my scrambled eggs, I had two slices of multi-grain bread and in addition, I had two more later in the day in a banana sandwich. From the bread, I was supplied higher levels of protein, dietary fiber, thiamin, riboflavin, niacin, vitamin B-6, iron, and phosphorous. I like to eat grits, I’m a true southerner, with my eggs and toast. ... I love orange juice; therefore, I topped off my breakfast with a big glass of orange juice. Of course, I expected to overindulge in vitamin C while drinking this delectable beverage, but I’ve now learned that it’s a good source of folate and thiamin. ... Bananas are also a favorite food item of mine and I normally eat one everyday at lunch while at work. However, being Sunday, I elected to spoil myself with a banana sandwich with peanut butter, another favorite of mine.
